Mix in a bowl
-2 cups oats, I like steel cut and rolled
-2 cups of water (can also use a milk of some sort, I think it’s unnecessary)
-1 teaspoon baking powder
-ground flax (optional)
-raisins (optional, add sweetness)
because right now my life is all things figs – I added fig preserves to this mix and reduced the water by half, this is very optional, but as many times as I’ve made this I have to say this added a great flavor!
Line a baking pan with:
-bananas – just slice them up and let them fall in the pan
-frozen raspberries (or whatever berries you like)
Spread the oat mix over the bananas and berries, I like to add almond slivers to the top for some added crunch, maybe some shredded coconut, get crazy.
Bake at 350 degrees for approximately 30 minutes.
Serve warm or cover and reheat the next morning. Add maple syrup or honey for desired sweetness or allow fruit to sweeten the dish. When reheating you may want to add a little liquid to each serving to keep from drying out.
A note on serving it and sweetening the dish: If you want it sweeter than it is add some maple syrup or raw honey to your individual serving, I think it’s good to bake this one without sugar and let everyone control how sweet they want it. I have been working on cutting back on my sugar intake, so for me the fruit is plenty, cooked bananas add an extra sweetness and flavor that raw bananas don’t.
