I love the caky fudginess of brownies! So I was really excited to find this eggless brownie recipe. I have made this so many times that I have tweaked it to be my own, simplifying the original recipe.
These fit so many diets – paleo, vegan, autoimmune paleo or just the chocolate lovers unite diet!
- 1 cup sweet potatoes cooked (I love cooking them for 15 minutes in the InstantPot)
- 1/2 cup almond butter
- 1/2 cup maple syrup
- 1/4 cup cocoa
Mix all with mixer – add nuts or extra chocolate chips if you’d like. I think it’s perfect with some walnuts.
Spread in a greased 9×9 baking pan or use parchment paper
Bake at 350 degrees for 20 minutes.
Allow to cool then refrigerate for at least 1 hour, more if you can.
