I’ve been wanting to make a little granola snack, but quite honestly I am less than thrilled to turn my oven on in August. Cruising Instagram I spotted some no bake granola bites. This is not my recipe, but I will share it. I literally jumped up and went to make them.
Disclaimer. While making them you will call me an idiot. You will think I lied to you. In no way is what you are doing going to yield in what you were promised. Be patient and keep going, the recipe will work.
- 1 cup old fashioned oats
- 1/2 cup almond slivers or pieces
- 1/3 cup sunflower seeds or pumpkin seeds
- you can add other nuts if you so desire
- few dashes of cinnamon
- 6 pitted dates
Put all ingredients in a food processor and just process until the heat from the processor does it’s thing and starts clumping everything together to make little chewy balls.
Then put it all on a plate or cookie sheet and clump them up in the size you want. I would not roll them, I think they are better in a jagged granola like clump instead of smooth balls but that’s up to you.
Let them sit on a cookie sheet to cool down and firm up for at least 15 minutes, longer if you’d like.
You can eat them as is, or with berries etc. You can also skip the ball part and make them into a crust of sorts. I am going to use them as a crust for berry tarts….eventually.
